今回のかくし味がマイナス要因だったわけは、市販のルウのもつ基本的な味にそのままかくし味を足したことで「味のリミット」を超え、「濃すぎ」「甘すぎ」という「くどさ」として感じられてしまったのでした。市販のルウは膨大な研究の末に完成されたものなので、安易によけいなことはしないほうがよいそうです。
